<p>There are actually queues forming in Melbourne! We are used to seeing queues in Paris or Tokyo but today, for pretty much the first time we remember, there was a queue to get into Koko Black in the Block Arcade and the new Lindt Cafe on Collins St. The Lindt store is so new that it hasn&#8217;t made it into their website yet.</p>
<p>The Lindt Cafe is set in a beautiful building &#8211; high ceilings with a little balcony that runs along both sides and across the back of the second storey, book cases set along the entire length of it. My idea of heaven really &#8211; a chocolate cafe below and books above. I wonder if you&#8217;re allowed up there. Anyway, no cakes or chocolates this time as I&#8217;ve tried a few from the Sydney store. But the macarons (which they call <a href="http://www.lindt.com.au/1/6/34/56.asp">delice</a>) tempt me and so I ask for the hazelnut, milk chocolate and roselli. As an afterthought, I say &#8220;You should give me the broken passionfruit one too&#8221; and they do. Mmmmmmm, thin crunchy shell with a chewy interior then the creamy ganache. </p>
<p>I&#8217;ll make them soon, hon, I promise&#8230;</p>

<p>Another clipped out recipe made! This one is from Gourmet Traveller September 2008, a dessert served at The Connaught. It&#8217;s a little more complicated than your average brownie but is also well worth the effort. It consists of three layers and is definitely not a one bowl kinda dessert.</p>
<p>The bottom layer is a moist chocolatey brownie studded with walnuts (macadamias if you follow The Connaught), the middle is caramelised banana slices and this is all topped with a dark (milk in the original) chocolate mousse. Here&#8217;s what it looks like:</p>

<p>I wanted to gift a few of these to a friend whose parents are visiting from Sweden but the brown paper casing had become saturated with oil from the butter. So, I picked up some cute fabric from Lincraft to wrap around the individual cases. One cake also went to a neighbor who is celebrating her birthday this week. That leaves <del datetime="2009-03-30T12:16:36+00:00">two</del> one for us!</p>
<ul>
Chocolate &#038; Walnut Brownie </ul>
<ol>
<em>200g butter<br />
100g dark chocolate<br />
3 eggs<br />
210 caster sugar<br />
100g plain flour<br />
100g walnuts, coarsely chopped</em></ol>
<p>1. Melt butter &#038; chocolate in a heatproof bowl over a saucepan of simmering water, stirring occasionally until smooth.<br />
2. Whisk eggs &#038; caster sugar until thick &#038; pale, fold through the chocolate mixture, then fold in flour and walnuts.<br />
3. Spoon into individual paper cases &#038; bake until just firm to touch (15-20 min). Cool completely</p>
<ol><em>1 tbs finely grated ginger<br />
2 bananas, sliced<br />
100g brown sugar</em></ol>
<p>1. Heat brown sugar in a large frying pan over medium-high heat until melted (2-3 min)<br />
2. Add ginger, stir to combine, then add bananas in a single layer and cook, turning occasionally, until caramelised and tender.<br />
3. Arrange on top of brownie, squashing to make a uniform layer &#038; leave to cool.</p>
<ol><em>2 eggs<br />
55 g caster sugar<br />
3/4 tsp gelatine, dissolved in small amount of very hot water<br />
5g Pavlova Magic (or eggwhite powder)<br />
300ml thick cream<br />
200g dark chocolate, melted &#038; cooled slightly</em></ol>
<p>1. Whisk eggs &#038; sugar in a heatproof bowl over a saucepan of simmering water until thick * can hold a ribbon (10-12 min). Remove from heat.<br />
2.  Whisk in gelatine &#038; Pavlova Magic powder.<br />
3. In a separate bowl, whisk cream until soft peaks form. Add melted chocolate and fold to combine then fold in egg mixture.<br />
4. Spoon mousse over caramelised banana and refrigerate until set (2-3 hr).</p>

<p>These look really professional but are dead easy to make. Put together the cupcake batter of your choice, fill some flat-bottomed cones two-thirds of the way up and bake as usual. Whip up a buttercream frosting and decorate with colourful sprinkles, hundreds-and-thousands and cute animal or flower motifs.</p>

My life is regulated by his feeding, playing and sleeping times and each long day stretches out like a road towards a horizon that I can never reach. I still find my release in baking although, for the time being, I am limited to cake mixes and quick &#038; easy recipes. No <a href="http://daringbakersblogroll.blogspot.com/">Daring Bakers</a> feats are possible just right now but maybe one day, one day in the near future, I will again be able to try something a little more complicated.</p>
<p>This easy-bake slice, modified from <a href="http://www.bestrecipes.com.au/recipe/Chocolate-Raspberry-Slice-L210.html">Best Recipes</a>, is a cut above the rest with its chocolate-flavoured coconut topping and my substitution of raspberry with loganberry jam. It reminded me of a shortcakey lamington and everyone loves a lamington, right? </p>
<p>I made these after putting EJ to bed for the night, the plan being to take them with me for a <a href="http://www.mops.org.au/">Mothers of Preschoolers (MOPS)</a> meeting the following day. I woke up, got EJ and myself ready to head out, went into the kitchen to pick up the slice&#8230;but where had it gone? I looked everywhere around the kitchen, including the oven and fridge, thinking that my preggo brain had not fully recovered yet but could not locate it. On my way, I texted A. asking whether he had seen the slice anywhere &#8211; &#8220;oh, you didn&#8217;t put it on the kitchen bench for me to take into the office?&#8221; (sigh!) At least the office team enjoyed it&#8230;</p>
<p>Make these but put them in a safe spot:</p>
<ul>
Base:</ul>
<p>125g butter<br />
125g sugar<br />
250g S.R. flour<br />
1 egg<br />
1 tsp vanilla extract</p>
<p>* Cream butter &#038; sugar, then add other ingredients and mix into stiff dough. Press into cake tin.<br />
* Cover base with a layer of loganberry jam</p>
<ul>
Top:</ul>
<p>1 cup shredded coconut<br />
1 egg<br />
1/2 cup sugar<br />
3 tbs cocoa</p>
<p>* Mix well &#038; spread over jam layer<br />
* Bake slice at 180C for 15-20 min</p>

			<content:encoded><![CDATA[<p>Wow, I was at Prahran Market on the weekend and heard some fantastic news from the owner of my favourite chocolate store &#8211; <a href="http://myfavouritefoods.com/2006/07/chocolate-fix/">Monsieur Truffe</a>. </p>
<p>Thibaullt&#8217;s stall in the centre of the fruit &#038; veg section is oft-visited and much-lauded by bloggers. The great news for all Monsieur Truffe fans (and for those who have yet to try his truffles &#8211; what are you waiting for?) is that a Monsieur Truffe store will be opening on Smith Street in Collingwood. He has started advertising for staff on his <a href="http://monsieurtruffe.wordpress.com/">blog</a> and the opening is expected to take place sometime in August. The store will stock all the current favourites but will also double as a cafe that serves pastries and host chocolate &#038; wine tasting evenings.</p>
<p>Another chocolate store also opened five weeks ago on Toorak Road near the corner of Chapel St &#8211; Ganache Chocolate. It&#8217;s reminiscent of Koko Black in its decor and has similar chocolate blocks studded with various fruit &#038; nuts. We didn&#8217;t try any chocolates but did pick up a <em>pan au chocolat</em> to go. Their pastries are made by the chef from <a href="http://www.lepetitgateau.com.au/wps/wcm/connect/Le+Petit+Gateau/home">Le Petit Gateau </a>on Lt Collins St and this version has a raspberry puree smear under the chocolate. Pretty good.</p>
<p><em>Update:</em> According to <a href="http://tomatom.com/journalism/">Ed&#8217;s &#8220;Ed lines&#8221; in the Herald Sun</a> (29 April 2008), Arno Backes is the man behind Ganache Chocolates &#8211; no wonder the similarity to Koko Black then given that he was the second master chocolatier there&#8230;</p>

<p>There&#8217;s an ongoing debate as to <strong>what exactly is a brownie </strong>- a cake, a cookie, a sheet cookie, a bar, a slice? But a brownie sits in a separate category all together. It should be denser than a cake and fudgier rather than light and fluffy.</p>
<p>I trawled through a large handful of recipes trying to decide which would produce a great brownie but most of the recipes I came across used baking powder. How could this produce a <strong>dense and fudgey brownie</strong>? Dissatisfied with the results of my search, the only solution was to create my own recipe. </p>
<p>Using a few of the recipes as a rough template, I reduced the amount of flour and sugar and left out the baking powder altogether. The chocolate and butter was melted over simmering water and the rest of the ingredients mixed in with a wooden spoon. By not beating the eggs, sugar and butter, I managed to avoid aerating the batter and this resulted in a <strong>dense, fudgey, amazing brownie&#8230;oops, blondie</strong>. I forgot to mention that I mainly used <strong>white </strong>chocolate instead of milk or dark.</p>
<p>It was great straight out of the oven and we&#8217;ll find out tomorrow how it tastes after sitting overnight.</p>
<blockquote><p><strong>Cin&#8217;s Blondie</strong></p>
<p>200g white chocolate, roughly chopped<br />
150g butter<br />
2 eggs, lightly beaten<br />
1/2 cup raw sugar<br />
1 tsp vanilla essence<br />
1 1/2 cups pl flour<br />
1/4 tsp salt<br />
50g dark chocolate, roughly chopped<br />
1/2 cup toasted almonds, roughly chopped</p>
<p>1) Melt 1/2 white chocolate &#038; butter in bowl over simmering water. Remove from heat.<br />
2) Stir in sugar, eggs and vanilla essence<br />
3) Mix in flour&#038;salt mixture<br />
4) Fold in rest of chocolate and almond pieces<br />
5) Bake in 20cm square tin at 160C until skewer comes out clean but with crumbs. Don&#8217;t overbake.</p></blockquote>

			<content:encoded><![CDATA[<p>I went past the recently expanded Haighs store in the Block Arcade yesterday afternoon, thinking that I would pick up some of their solid milk chocolate eggs. There was a long line in front of both registers, quite a few empty shelves and no milk eggs. Guess I was a little too late.</p>
<p>I wandered over to the slightly less hectic Koko Black shop. They are selling Easter Bunnies starting at $35, so if you really want a treat&#8230;</p>

<p>Is there anyone out there who doesn&#8217;t have good memories of Nutella, seriously. I&#8217;m sure that I don&#8217;t know any of them. My memories of Nutella stem not only from my childhood, but from our subsequent travels in Europe.</p>
<p>But, we will start from the beginning when I used to bring Nutella sandwiches made with thinly sliced Sunblest white bread to primary school. In around Grade 5, a new loaf came along in the form of the extra soft, light and airy Country Split loaf. Suddenly, it seemed, every sandwiche was made with these thicker slices so, of course, my Nutella sandwiches HAD to be made with this bread too. Even at that time, I was always quite particular about how my sandwiches were made and eaten. My sandwiches had to have a <em>thick</em>, oozy layer of the chocolate goodness &#8211; forget that thin smear just in the middle of the bread versions that my dad preferred. Nope, it had to be spread right to the edges of the bread. When I brought out the sandwich at lunch time, I would then hold the sandwich in both hands and squish it down between my fingers and thumb until the cross section revealed equal proportions of the white, brown, white layers. Occassionally, I would then roll it into a cigar shape before nibbling away at the sandwich.</p>
<p>Later on, I discovered that Nutella paired beautifully with both vanilla or chocolate ice cream. I would soften the Sara Lee Ultrachocolate ice cream in the microwave until it had the consistency of soft serve, then swirl in teaspoonfuls of Nutella &#8211; how&#8217;s that for a chocolate hit! What a joy it was then to spoon the creamy concoction into my mouth and pressing the hardened Nutella chunks with my tongue against the roof of my mouth causing it to melt gradually.</p>
<p>There was then a lull in my Nutella enjoyment until my first trip to Europe, when my memories of it again come into sharp focus. Paris and the ubiquitous crepe stalls &#8211; need I say more? The wafting, glorious scent of hot crepes spread with nutella&#8230;the thought of which can still cause me to swoon. Needless to say, A. &#038; I had a few of these during our time in France. It seems that Nutella is not only enjoyed in France but also in Italy, where large families (or so I assume) can purchase 3 kg jars of this stuff from the supermarket. You should&#8217;ve seen the amazement in my eyes when I first came across one of these bottles. I cradled it in my arms with hopes of carrying it away with me, but alas, the (im)practicality of lugging a 3 kg jar of Nutella across Europe wouldn&#8217;t allow for this.</p>
<p>There is one memory of Nutella that makes me laugh instead of drool however. We were having a chat with some American friends during our time in Italy about Nutella. As with many othe words (like Adidas), they had a way of pronoucing it that quite clashed with everyone else&#8217;s and one friend insisted on pronoucing it as <em>new</em>-tella rather than nut-ella. There was no way she was backing down from this being the correct pronouciation until A. asked &#8220;So do you eat hazel-newts?&#8221; <img src='http://myfavouritefoods.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Nowadays, we often have a tiny bottle sitting in the fridge as A. likes to have a spoonful every now and then (I prefer it at room temp myself). In honour of the many happy memories that Nutella has provided, I&#8217;m celebrating <a href="http://www.nutelladay.com/">World Nutella Day</a> with these chewy macaroons in which Nutella plays a starring role. I was actually after a slightly lighter cookie with a crispier shell but these Gordon Ramsey macaroons did well enough&#8230;all gone now.</p>
