Anzac Biscuits

I almost typed in Anzac Cookies, but that would have just been SO wrong as these biscuits were originally baked during WWI by wives and mothers for the Australian and New Zealand Army Corps (ANZAC) soldiers. Luckily I caught myself in time and wisely used the term ‘biscuits’ instead. Anyway, a rose by any other name and all…these taste pretty good!

    These biscuits are very wonderful. I love Anzac Biscuits. They appear regular in my pantry, and I dip them in coffee or tea :)

    I happen to try out a receipe for this biscuit, and it turned out quite hard on the outside but the centre was rather chewy. As I have tasted Anzac biscuits before, I would like to know if they were supposed to be chewy. I loved it dipped in coffee too. I have looked up other receipes for anzac biscuits, but none of them mentioned whether these are chewy or crispy biscuits. I have tried baking them for longer time, but they still turn out a little chewy in the centre but the sides are crispy and quite dry. Could anyone advise me?

    Where can I purchase the actual biscuits? I am not a cook and would much rather just purchase them then make them myself.

    Anh: Mmmm, these are great for dunking because they soak but don’t fall apart and end up at the bottom of the teacup!

    Pauline: Hmmm, I understand that the golden syrup makes them chewy and I like them that way rather than rock hard. Maybe you could try replacing the golden syrup with extra sugar?

    Michelle: Well, you can get Anzacs at supermarkets but they are really quite the same. Try your local cafes as many of them tend to serve Anzac biscuits.
