Madeira Cake
A. loves having a slice of Madeira cake with a cup of tea but we have not had much luck lately with the supermarket variety. He put a request in for this cake some time ago so last night I baked one based on Nigella’s mother-in-law’s recipe as found in HTBDG. Madeira cake is supposed to improve with time, so I made it last night for a dinner that mum&dad are hosting tonight.
Madeira Cake
240g softened butter, 200g caster sugar, grated zest and juice of 1 lemon, 3 large eggs, 210 SR flour, 90g plain flour

Cream butter and sugar then add lemon zest

Add eggs, one at a time, with a tablespoon of flour between each addition

Gently mix in rest of the flour followed by the lemon juice

Pour into lined loaf tin and sprinkle with caster sugar before popping into oven at 170C for 1 hour

So what’s it like? It looks really moist, like the ones from the supermarket.

Cake was delicious. Definitely better than supermarket variety. I left it in the oven a bout 5 min too long so the edges were a little dry but the rest was beautiful and improved over the next few days!

ooh yum. homemade madeira cake is way better than shop bought – especially if my mum made it.
